Tim by Harries
Tim is chef and co-owner of Tim by Harries, one of the restaurants I collaborate with. With more than ten years of experience in the kitchen, he spent the past year and a half as head chef at Het Eigendom on Witte de Withstraat — where he already started collecting oyster shells for me.
Since opening Tim by Harries on Hoogstraat in May, Tim continues to save both oyster shells and eggshells from his kitchen. These everyday leftovers have become the raw material for my tableware, making his kitchen an important part of the cycle.
